From Hotel to Castle

Dan Robertson…

Young and ambitious chef Dan Robertson, originally from the Borders, just so happened to fall into cooking and hasn’t looked back since! Starting in hotel catering and banquets, Dan found a love of fresh ingredients and their flavour profiles. Gaining experience in the one Michelin star Chester Grosvenor before working under Chris Woods as sous chef, Dan believes that food should stay true to its roots, keeping it simple and all about the flavour. When asked to join us a guest chef Dan’s response was brilliant!

‘When the chance came along I couldn’t say no as these experiences don’t come along every day. At Hawthorns, we have the freedom to cook any style we like, presenting simple and attractive food, full of flavour. I love creating dishes that put a smile on the customers face, and what better way to see those smiles than an event like this!’

Hawthorns, taking its name from a key partner of the Stephenson Works site from the 19th Century, offers a brasserie style, authentic North Britishmenu. Locally sourced and fresh food prepared daily, the restaurant boasts the connections it has with North East suppliers. From Chainbridge Honey Farm and Doddington Dairy to Robson’s of Craster, providing everything from honey to kippers, Hawthorns is proud to showcase the best of the North East. Hawthorns provide some delightful little dishes, from pan haggerty (a traditional Northumbrian delicacy) to smoked salmon and cucumber savoury bites, you can find something to enjoy while sipping your ‘gin and juice!’
